Oh meals on the river. What will it be for supper tonight? Will I enjoy the breakfasts? Will I enjoy the lunches? One thing we try to do is provide a variety of foods so everyone can find something they like.

This past summer we had a variety of old and new meals. Monday night was taco night with all the fixings, including chicken fajita meat. Tuesday night was Morgan's spaghetti, with meatballs and cheese or a vegetarian marinara with fresh squash. Cassie made a river soup on Wednesday nights with fresh vegetables like squash, zucchini, carrots, and onions along with rice and elbow macaroni. This soup, when combined with cheese, and chicken for the carnivores, was always a big hit. The Thursday night dinner, grilled pork chops, macaroni and cheese, green beans, and mixed vegetables rounded out a great week.

Our breakfasts included a variety of items. Hot oatmeal is always popular, sometimes sprinkled with brown sugar. Many enjoy bagels with cream cheese (or hummus for the adventurous), often sprinkled with craisins. Along with these standbys we always have fresh fruit including pineapple, cantaloupe, mango, and honeydew.

Lunch is a simple meal, served quickly to the hungry. Sandwiches with flatbread topped with peanut butter and jelly or Ms. Beth's kitchen made hummus are the backbone of lunch. Sliced pickles, radishes, and English cucumber make a fine topping for these sandwiches or for a tuna sandwich. Smoked kippers (or sardines) served on crackers are devoured by many. Fruit is always available to go with these.

During the day snacks are available at any time, whether from the fruit cooler or of the snack barrel. The fruit cooler contains apples, oranges, and other fruits as available (plums, pears, etc.). In the snack barrel are granola bars, cheese crackers, and more. Bottles containing goldfish and other snacks are in each boat.

Meals often change as time goes by. In the past we have made Chile, sausage and chicken gumbo, and other dishes. Who knows what may be in store for future adventurer meals!
